Jalapeno Watermelon Margarita

July 3, 2019 1071 views

Fresh, sweet watermelon puree, lime juice, Triple Sec, and jalapeno-infused tequila make these Jalapeno Watermelon Margaritas super summery, delightful, and just a tad bit sassy. The sassiness is probably why I like them so much.

Infusing Liquor

Infusing liquor with hot peppers is a must try for any lover of heat. The combination of sweet, salty, and spicy will wake up your taste buds and make them say- Let’s get this weekend started!

My automatic response to anything my husband asks me to do is – Write it on a piece of paper and put it on the kitchen counter.

Otherwise, there’s just no chance it’s getting done. I can’t seem to remember anything anymore.

There are too many thoughts and ideas darting around in my mind, colliding with each other. It’s like my brain has turned into one of those pinball machines.

So I make endless lists. And then I forget where I put them.

Don’t Forget the Salt

I was so focused on making these Jalapeno Watermelon Margaritas look pretty in a hurry. I wanted to take pictures of them outside, and it was a bazillion degrees, so I figured I had about 3 minutes before all the ice melted

And I forgot to coat the rims of the glasses with salt.

That just can’t happen with Margaritas y’all.

Especially watermelon margaritas. Salt does something magical to watermelon. It really makes it come alive.

Lucky for me, they were still delicious and plenty strong.

After a few sips, everything was right in the world again. Fears of having to be sent away to a home for people with early dementia slipped away. These drinks are sweet, refreshing, and sassy,, just like me.

Memory problem. What memory problem? Cheers y’all!

You’ve probably noticed that the heat of jalapeno peppers can vary. A LOT. Like from so mild you think it’s just a bell pepper in the shape of a jalapeno, to somebody call the fire department. The heat of your jalapenos will determine how long you infuse the tequila. Typically anywhere from one hour up to a full day.

Ingredients

  • 1 jalapeno, thinly sliced
  • 3/4 cup white tequila
  • 8-10 cups watermelon chunks, a large dice
  • 1/2 cup fresh lime juice
  • 1/3 cup Triple Sec
  • 1/4 cup simple syrup
  • saltchili powder, and lime juice for salting rims of glasses

Instructions

  1. Place tequila and about 4 slices of jalapeno in a glass measuring cup and place in the refrigerator for 1 to 4 hours depending on how spicy your jalapenos are and how spicy you want the tequila to be. Take a taste after 1 hour and decide whether it is spicy enough. If so, remove jalapenos.
  2. Place watermelon (you may need to do it in batches) in a blender and blend until liquified.
  3. Pour watermelon through a fine-meshed strainer, pressing on it with the back of a spoon to get all the liquid through. Measure out 3 cups of watermelon juice.
  4. In a large pitcher, combine the 3 cups watermelon juice, tequila, lime juice, Triple Sec, and simple syrup.
  5. Place salt with a little chili powder mixed in on a plate. Coat rims of 4 glasses with lime juice and dip in salt mixture.
  6. Fill the glasses with ice and pour Margaritas into glasses. Garnish with lime slices and jalapeno slices if desired.

Recipe Notes

To make a simple syrup, combine equal parts sugar in water in a small saucepan and heat over medium heat, stirring frequently until sugar is dissolved. Remove from heat and cool. Can be stored in the refrigerator for future use.
